A new morning routine – specialty coffee trends are taking over

Since baristas first started serving the caffeinated concoction a decade ago, cold-brewed coffee has exploded in popularity. According to the market research firm Mintel, cold brew sales jumped up 580 percent between 2011 and 2016.

So what’s all the buzz about? First, cold brew is not just hot coffee poured over ice. The cold brewing process takes time — coarse coffee grounds are soaked in room temperature or cold water, then steeped like tea for 12 hours or more. Water quality in the brewing process is an important component to creating a high-quality taste experience. The end result is a smooth brew with a deep flavor.

And coffee lovers can rejoice in the fact that cold-brewed coffee is 67 percent less acidic than the conventional brew, so it’s easier on your stomach and your teeth.

Kicked-up cold brew

Nitrogen is the latest trend fueling the cold-brewed coffee craze. First appearing in coffeehouses in 2013, nitro brews reached the mainstream coffee scene last year.

The novelty drink is essentially cold-brewed coffee infused with nitrogen gas resulting in a rich, creamy beverage reminiscent of an Irish stout (think Guinness). Industry-leading products like Xylem’s Flojet pumps are vital to the nitro brew process.
